You'll have to excuse my limited electrical knowledge but isn't the relays job to stop one current from going through the circuit until it "switches" and effectively then blocks the circuit that was open and opens the other one?

Double throw can do that (break and make one to a common point), but double pole has two circuits in it.

(Normally you would get a dpdt relay and have the ability to switch two circuits, either NC where you open it, or NO where you close it or both depending on your needs).
