depends on how bad the car is. You can easily spend 5k+ fixing a problem car if you arent able to do the work yourself.

Ok so I think that I am getting the feeling that this is a very poor move unless I get extremely lucky and it turns out to be good

get the car checked by someone that knows their way around them maybe. Could be the bargain of the century? Impossible to say.. A bad VR6 really can be a money pit though.

    get the car for 1500.
see exactly whats "wrong" with it (immediately - ie not pass blue slip)
do the research (DIY, manuals (buy the bentley!!), etc)
    get quotes for repairs
    do up a price list
see what you can do yourself and what you need to pay for...

if you can afford it, there you go.
if you can't, part the car out. sell the gear on here for decent money (people here get it at good money, you make more than what you paid)

Depends whats wrong with it, if say the heatercore aircon and all the windows are broken, that will be a couple thousand, windows probably a couple hundred each. But if the engine is still going strong and the body looks alright, then 1500 could be a very good price. Not like you need heating/ac ect. having it checked out by a mechanic/someone who knows there mk3 vr6's could be a good idea
