I agree with you about cutting up genuine car.
My way of thinking is it's O.K. to modify to your hearts content (without cutting up the car in anyway) but only if it can be reversed. That's my style.

My GTI's genuine, but my mod's aren't cutting anything up or out (which can all be reversed even the pedal box removal) & the external & internal aspect's will be as standard.
If I didn't say what the car has had done, you couldn't tell & think it is standard.

But in some circumstance's I agree & disagree in regard to how far the mod's go.
