Normally, any other car would simply spin the front wheels all the way to the embarrassment, but this one clunks it into the despair

Is this normal?
Yes. It is called "axle tramp". It only happens when you take off hard enough to spin the wheels (easily done in the wet).
Golfs (and many other VAG cars) have relatively soft engine and gearbox mounts to better absorb vibration, but this softness also allows them to move around a lot when under pressure from taking off hard. If traction is a bit uneven (which it usually is) this "give" allows the whole engine/gearbox unit to rotate back and forth somewhat violently (it sounds like the engine is about to fall out in bad cases).
You have some options:
1 Ignore it (not a very good idea)
2 Adjust your driving style to avoid this happening (ie take off a bit more gently and smoothly). This is what your dealer is likely to tell you to do (and maybe they will throw in a lecture about "car abuse" as well
)
3 Depending on the tyres you currently have you can may find some improvement by fitting tyres with more traction.
4 Fit harder engine/gearbox mounts (but this may increase NVH). See "dog bone"
5 Change your suspension (springs, shocks) and possibly some bushes.
6 Fit an LSD
7 Buy an AWD car (Golf R ?)
Searches on this forum (and elsewhere) will find you much more info about some of these options.
