You can already get auto boot on the wagon, my RS has it. Voice control is standard on the 8inch screen too (but the tech pack can be added to the 6.5 models).

Completely new headunit i'm afraid. People can retro fit them, you get a bigger, better quality screen as a bonus, but it costs about $2K or so.

AFAIK no one has wireless carplay on the market? VW's Discover Pro is even used as the poster headunit on Apple's carplay page
In theory the BT mic _should_ work, the pins might need moving around in the connectors I haven't had a chance to test as the CP mutes the audio on the head unit :( I doubt the pins have been moved...
