Mine is set up the same as yours and as soon as someone grabs an interior door handle it unlocks all doors. AFAIK it won't automatically unlock when you pull the key out for safety.
I'm sure there is a very comprehensive checklist one here somewhere, I used it when we picked up our tiguan and it was very thorough. Make sure you get a full tank of petrol too, none of this 1/3...
