Hey guys did a quick search on the forum about installing new rotors and pads into a 2001 Bora 4motion, couldn't find anything.
Gonna tackle installing them myself this weekend, is there anything I should watch out for?

This shouldn't be a difficult job. I'd do a fluid replacement at the same time - make sure you bleed out all the old fluid!
What rotors are you getting? DBA do a stock rotor replacement for ~$150, or ~$260 for a slotted 4000-series rotor to suit.
That's fair enough - I don't think most people drive hard enough to need slotted rotors :)
Put some anti seize paste on the hub making sure not to get it down the bolt holes. Makes removing rotors so much more easier the next time around :)
If you are gonna replace the braking fluid you'll need vagcom to get the air out of the abs pump. You'll need to bleed the master brake cylinder as well. Its a pain in the bum
I'm guessing the rotors are vented ones. Make sure you get them around the right way. They should be marked left and right if they're OEM rotors but yeah if you install them the wrong way around direct air flow correctly.
