It could make the forum more organised, but I prefer this way in that everyone knows what's going on in every state. I know that if they were divided up, I'll just be visiting the NSW section.

An alternative is to make sure everyone that makes a post there is to put in the state in brackets in the the title of the thread, e.g. [NSW] Cruise to Wollongong.

It would require alot of organising for an interstate trip. Also, it most probably won't be free, the participants would most probably be required to fork out some dough for accomodation, camping, food and what not. I always liked the idea of the $20, or $50 cruise. Clubs work like that, and although I'm aware that this isn't a club, it would probably end up being the only way to organise and effectively manage a cruise of that magnitude.

state sub sections would be a good idea. if the forum continues to grow its gonna get even more messy

I've often wondered about this too. I think this is especially important when there are multiple cruises going on in different states as it can get quite confusing/messy!
