I agree with Paul. Let it over flow and leave it for a few days. and see if the car holds a level. (make sure you test the same time, ie in the morning before you start it up).
Also, you should have a fluid level indicator, that will go off if you're using coolant.

Water level drops. No visible leaks anywhere. If there was a leak with the pressure of the boiling water I think I'd see a it.

Does the water level keep dropping if you leave it or does it drop and then stay at that level?

If you park the car on concrete is there a water stain to show where it's leaking?

How much water are you losing each day?

When you see it boiling is it bubling or steaming?

Do you have next Saturdays Lotto numbers?

    Cheers

Haven't seen any water underneath it. In a couple of hours when the car is off the bottle goes from the top to middle. It's bubbling. Yes I do, but I think I'll keep them a secret so I'm the only person that wins.

    "Double, double toil and trouble
    Fire burn, and cauldron bubble."

    Sorry couldn't help it.
Seriously though if there is bubbling but no steam, it sounds like it's leaking air into the system somewhere.
    No visible leaks though?

Have you run with the heater open?

I once had a corolla like this & it was a really small pin hole in the casing of the water pump. Couldn't see anything until it was up to temp, then the hole opened up.

Took my mechanic & myself nearly 6 months to find. Actually looked around everywhere with a UV light with the hope that the coolant would glow.

Wanting to go gt28 now. Does anyone have any suggestions on the best way to do it? Buy a kit or get a manifold and adapters made up so it works with my current exhaust and I/c piping? Also any advice on fuel pump and best way to do it?

Nope. No idea, haven't been bothered to do anything to the white car.
